At Hilmy, we believe through and through that wine is made in the vineyard. We strive for quality in farming, and work to achieve harmony among the factors contributing to quality winegrowing. Hilmy Cellars produces and bottles wine in small lots from over 100% Texas-raised fruit as well as small lots of out of state wine under the a.k.a. Erik Hilmy label. We use a variety of techniques to hand-produce our wines. With respect for tradition and application of modern methods, we strive to let each grape give a true expression of varietal heritage and Texas Terroir.

Located just South of Fredericksburg, Texas, Slate Mill Wine Collective lies on a scenic estate with expansive production facilities. Our goal is to provide expertise and custom crush space to enthusiasts who wish to produce their own wine. Each of these winemakers represent the pioneering spirit of the Texas wine industry, and we feature their products in our tasting room and introduce their brands to our wine club. Our team is dedicated to bringing wines crafted with integrity and unparalleled hospitality to our guests.

La Bergerie is an artisanal wine bar and market specializing in fine wines, cheeses and charcuterie, curated by John & Evelyn Washburne and cured by Chef James Monzon. Our wine selection ranges from fun and affordable bottles to rare, hand-picked selections that can be enjoyed for many years to come.
